Blackened Talipia

This one is a request for Brother Allen.  This is a wonderful receipe for a Blackened Rub that I found somewhere out on the internet.  It is really good on any whitefish.  We have really enjoyed it on talipia.  If you reduce/eliminate the Cayene even the littles will enjoy.  I hope that everyone will give it a shot and let me know if your family enjoys as well.

Blackened Talipia

3 Tbs Paprika

1  tsp salt

1 Tbs Onion Powder

1 tsp Ground black pepper

1 tsp Cayenne pepper

1 tsp Ground thyme

1 tsp Oregano

1/2 Tsp Garlic Powder

4-6 Talipia fillets (or another white fish)

Combine spices in bowl.  Put heaping amount on each fillet.  Rub into fillet until both sides are coated.  Let sit at room temperature for 15 minutes.  Heat oil in skillet and cook 2-3 minutes each side.

Note:  I prefer to grill fillets over charcoal or gas grill.  Either way they are wonderful
