Dads Gourmet Corner – Patrol Chili

 I have had the great joy of being a Scout Leader for over ten years.  Along the way I have prepared many meals for scouts and leaders alike.  One of the benefits of this role is that I have collected a great deal of really wonderful recipes.  These have included everything from “eggs in a bag” to “arm pit fudge”.   An all time favorite with leaders and boys alike was Troop Chili.  It is a simple recipe that will satisfy the taste buds of kids and adults alike.  I have often been asked for the

 reciepe…but have never given it up.  Recently my boys have passed the rank of Life and Eagle.  Therefore, I feel that now is the time to pass this one on to all the Grub Masters our there.  The exciting news is that my oldest girl is now active in American Heritage Girls.   I guess it is time to embark on another journey down the trail.  I sure hope that the girls like arm pit fudge!

Troop Chili

2 lb. lean ground beef

1 green pepper chopped

1 medium onion, chopped

1 tbsp garlic flakes

2 one lb cans tomatoes

2 tbsp chili powder (or to taste)

1 ½ tsp salt

½ tsp oregano

½ tsp cumin

1 cup hot water

2 15oz cans chili beans

1 15oz can whole kernel corn


Cook beef, green pepper, onion, and garlic in Dutch oven until beef is slightly browned.  Drain off excess grease.  Add all ingredients except corn and beans.  Simmer uncovered for 1 hour.   Stir in undrained beans and corn.  Simmer 30 minutes longer.  Serve.   For the brave, Jalapeno pepper may be substituted for the green pepper or added.  I enjoy serving with cheese and/or sour cream to taste.
